Pimiento de Padrón is a real classic from Galicia in Spain, which is widespread in gastronomy on a worldwide scale. For the famous tapas, the pods of this Capsicum annuum are harvested when still green (unripe) and relatively mild. They’re then served as a starter. You grill the green pods and then top them with sea salt. If you let the pods ripen on the plant, they turn red and develop an intense heat.
